Dark Wood Panels
  • Fiddleheads & Wild Leeks

    May

    Fiddleheads
The taste of fiddleheads is unique. It is like a cross between asparagus and young spinach. We love to first boil then pan roast them with some garlic & olive oil.

    Wild Leeks (Ramps)

Wild leeks are like a cross between a leek & scallions. They taste stronger than a leek, which has a mild onion flavor, and are more garlicky than a scallion. We love them in many dishes, and if there's any left over they make a great pesto.

  • Local Asparagus

    May - June

Local asparagus is best showcased raw or briefly cooked. A versatile ingredient, it can be sautéed, steamed, boiled, baked or fried. Spring ingredients such as morel mushrooms, green garlic, wild leeks, fennel, young lettuces and citruses are ideal pairings. We love it grilled with a splash of citrus and drizzle of olive oil.
